We LOVE this Thai-inspired chicken curry recipe. It really is so easy (probably our #1 reason we love) and so tasty! Family is sure to love and if they prefer spicier food… just add Siracha sauce over the top!
Easy One-Pan Red Curry Chicken
Easy, one pan, Thai inspired, red curry chicken! This dish is fast to make and not many ingredients. Whip it up in less than 30 minutes.
Ingredients
- 1 jar Thai red curry sauce (Trader Joe's)
- 2 lbs Chicken breast (or thighs)
- 1 yellow onion
- 1 red pepper
- 1 yellow pepper
- 1 C Jasmine rice (optional)
Instructions
- Chop peppers into quarter size pieces, set aside.
- Chop onion into large chunks or slices, set aside.
- Cut chicken into quarter size pieces.
- With olive oil, on medium heat, cook chicken over stove top, until all sides lightly cooked. About 7-10 min.
- Start your rice and cook 20 minutes.
- Once chicken is lightly cooked, add chopped peppers and onions, cook another 3 minutes.
- Add whole jar of curry sauce. On medium heat, let come to a bubble and ensure all veggies and chicken are coated.
- Serve topped on 1/2-1 cup of rice!
This recipe is delicious, fast, and can easily be made low-carb just by eliminating the rice! Enjoy!
